It’s hard to imagine anything more elegant than sipping a Bellini here, in view of The Grande Allée and the glittering sea. Settled in the chic, refined atmosphere of Bar Bellini, it is easy to meditate on the history of this legendary hotel.

Alongside our iconic Bellini, the Eden-Roc Splash remains a Riviera classic. Originally crafted in 1934 by Jimmy Pujatti, I’ve added a fresh hint of raspberry, giving this timeless cocktail a modern, refreshing twist.
